Challenge:  A ‘low-’ or ‘no-’ fat coating is required to give the perception of a full fat product.

Client: Global FMCG manufacturer

Background: The product is fat-free and it is desirable to coat the product in such way so that, when consumed, the immediate impression is one of a full fat product.

Goal: Ingredients and technologies that can be used, as a coating, to create an immediate impression that the product is not fat-reduced or fat-free, and provide a smooth desirable mouthfeel.

  • ‘Low-’ or ‘no-’ fat coatings for food which give the impression of creaminess or smoothness.
  • Fat mimetics which can be used as a coating.
  • Of particular interest are pharmaceutical tablet or capsule coating technologies and applications.
  • Also of interest are coatings that can be applied to, or used as ‘edible packaging’
  • Ingredients and technologies at all stages of technology readiness, from early-stage research and development to commercially available solutions, will be considered.
  • Ingredients will ideally be natural/clean label.
  • Ingredients will ideally be approved/ or in the process of being approved for use in Europe.
