Challenge:  Enhance the functionality and organoleptic properties of its products through the application of delayed or controlled release technology, such as encapsulation of functional, active or flavour components.

Client: Global FMCG manufacturer

Background: Controlling the release of functional or flavour components in food and drink products is beneficial, as it allows the design of products so that the functionality or sensory characteristic can be adapted to be delivered when and how desired, in an optimised manner. This can also be utilised to introduce elements of novelty through layering or changing flavour during consumption, deployed to ensure a consistent delivery of flavour, during consumption, or extend the shelf life of a product by protecting volatile or less stable ingredients.

Goal: The client is developing a novel product that will consist of a phased or controlled release of functional, active or flavour components.

Controlled Release

Key technologies and ingredients of interest are solutions which:

  • Allow the controlled release of functional, active or flavour components, through exposure to water, temperature or low pH environments.
  • Ensure the stability of the encapsulated functional, active or flavour components. for up to 12 months in ambient conditions.
  • Comprise of recognisable ingredients and generally considered as ‘clean label’.
  • Have a neutral taste.
  • May deliver multiple or phased release of functionality or flavour during a single consumption.
