Challenge: Next Generation Cooking to improve operational efficiency of manufacturing processes
Client: Global Food manufacturer
Background: A key process step in the production of a wholegrain wheat product is the gelatinisation of wholegrain starch through steam cooking. As part of strategic planning for the ‘factory of the future’, the client is actively looking at next generation cooking and processing technology to facilitate the transition to more sustainable and resource efficient manufacturing process technology.
Goal: As part of an overall programme of continuous improvement of manufacturing efficiency the client is looking to identify alternative continuous processing technologies which could be deployed to achieve similar product quality and improve efficiency. This will be achieved through the identification of:
- Novel processing technologies to replace existing steam cooking processes
- Alternative continuous cooking processes that offer resource efficiency benefits when compared to traditional steam cooking
- Existing cooking processes utilising alternative heat sources are of interest
- Steam cooking methods with improved efficiency will be considered
- Technologies at all stages of technology readiness, from early-stage research and development to commercially available solutions, will be considered
