Client: Global FMCG manufacturer
Background: Humectants attract and hold water within a food or cosmetic products. In foods they are effective in controlling the water activity within a product, restricting water availability for microbial growth and preventing negative quality failures such as sugar crystallisation by binding water within the product. In cosmetics they are often used in skin and hair-care provide hydration. Humectants can also act as solvents and stabilizers, to help disperse and dissolve flavours, colours, and other additives throughout food and beverage flavour systems
Goal: The client is looking for natural humectants that can be used within food and beverage systems. Technologies of interest include, but are not limited to:
- Natural humectants
- Natural surfactants
- Natural stabilisers for flavour systems

Commercially available solutions and early stage developments are of equal interest for this project. Solutions are ideally already approved or in the process of being approved for use in food and beverage systems in the UK, Europe and US.
